Peasant Bread? Artisan Bread? It's all good!

Any homemade bread is good to me as long as it has natural ingredients in it.(and LOVE!)
I use organic locally grown SPELT flour, unbleached wheat flour, fresh ground flax seed meal, sea salt, organic raw agave nectar, and vegan vegetable spread in my breads. This year I will be offering more healthy bread choices for you bread lovers out there! Sprouted grain breads, Cinnamon rolls, savory bread bowls, and more! FARMERS MARKETS will soon be here and I am getting my artisan hands geared up for another successful season. Hope you will support your local farmers market ~ it's good for you and the planet!

Diary of the Banana!

Dear Diary,
I can help it. I want to be eaten. I do however ask that I be eaten with my best buddies whole oats and flax. These guys want to be eaten too ~ really badly! We all love going places, especially the human body. We get to release all of our goodness into them so that they will feel good and then they will want more of us.
I know I won't live forever on this tree so I may as well do a body good and live through them. I think this may be my last entry as I am ripening quickly and she keeps on looking me and just brought out the walnuts!

These Double peanutbutter cupcakes were amazing and delish! Made with orgainc spelt flour, I was surprised at the great texture they had. The peanut butter icing was whipped to perfection and so light and smooth. I would love to start making cupcakes for some of the local coffee shops. So much fun to offer healthy & tasty sweet treats for the sweet tooths out there!

Snacks and More in Downtown Elmore!

THE STUDIO ~ 339 Rice Street in Downtown Elmore Ohio.
Healthy Bakes is now in Elmore ~ Granola, Snacks, Loose Herbal teas, and more!
I like to call this my shop away from home. This is such a wonderful way for artisans to come together in one place to get shoppers in one place to find one-of-a-kind handmade items for gift giving or yourself. This quaint little shop has amazing finds, so much charm and the ladies who operate it are some of the friendliest people you'll ever meet! I love being a part of something so special in a small town like Elmore. Your visit to this village will not be short as there are plenty of places to go. Schedel Arboretum, Benches Greenhouse, the Antique Shops and restaraunts are just minutes if not steps away from each other.
Support small community shops and explore the possibilities!

Winter is here
as we wait out the long cold nights
and short days....baking breads & cookies
we gather for Christmas....remembering
another year with a kiss and dreams for more peace in the world.
The kids will sleep in and play with new gifts and
memories will be created by them to share later.
These are the days of the nostalgia in all of us.
Happy Holidays.

Souper Bowl Recipe

Here is the recipe for the wonderfully warm
vegetarian soup we had at the Summer Kitchen
last Thursday night. I served this up with some
sundried tomato & basil focaccia bread topped with
a spinach and basil pesto.
This meal was so low in calories and fat that we had to
finish it all off with a little dessert.......Happy Brownies!
1 head of garlic, unpeeled
1 TBSP olive oil +
1 lrg yellow onion chopped
1 32 oz container of vegetable broth
1 1/2 cup leftover boiled potatoes
or mashed potatoes
2 cups thinly sliced carrots
1 TBSP fresh Rosemary
1 tsp dried basil
1 TBSP fresh parsley or 1 tsp dried
4 cups fresh spinach leaves or swiss chard
1 can (15oz) cannellini beans, rinsed Serves 8
1. Preheat oven to 425 degrees F. Slice off the top 1/3 of garlic & discard. Drizzle with a few drops of olive oil & wrap in foil & roast for 30 -40 minutes. Let cool. Squeeze roasted garlic from the papery skin into a small bowl and discard the skin.
2. Heat oil in a large saucepan over med-high heat. Add onion & cook 5 minutes or until translucent. Add broth and one third or the garlic. Bring to a boil, reduce heat, and simmer 5 minutes.
3. Working in batches, puree potatoes and onion -broth mixture in blender until smooth. Return to pan.
4. Stir in carrots, rosemary, basil, parsley and remaining garlic and cook over medium heat for 10 minutes, stirring often.
5. Add Spinach or chard, return to a simmer, and cook, stirring 5 minutes. Add beans and cook 5 minutes longer. Enjoy!

Flavorful Herbal Soup

This is the soup for the Souper Bowl at
This soup is of course vegetarian/vegan
and uses 4 of my favorite herbs.
I will also have some herbed butters
and fresh baked wholesome baguettes to
feed you!
Get fed while having fun! And the shopping experience....
it doesn't get any better than this!
This soup takes no time at all to make
and tastes amazing!
I actually got some things done while making it!
Roasted Garlic takes 1/2 hour. You can do some
chopping or other stuff while that's in the oven!

Boil some small potatoes while helping with homework.
(I used our organic home grown yukon gold babies!)
This is one of my favorite suppers, it's nutritious
and packed with flavor. It's also a great soup for people
trying to cut back on their sodium intake.
I'll post the recipe after the class.

New Sign of the Thymes

This is our new sign for our new year and our
up and coming bakery/garden shop and down the
road, cooking school. My husband is
constructing the post as I write this and I can't
wait until it is out front surrounded by new
seasonal edible(herbs) landscaping, some enchanted
garden art and maybe a hidden garden troll for luck!
And the lost will be lost no more!
I will be adding a few hand painted embellishments
to this sign before it goes up. Stop by to see!
